  • Self rising cornmeal
  • Buttermilk
  • Onion (Med.)
  • 1 giant loaf white bread (can be store brand)
  • Eggs
  • Butter
  • Cornstarch

Instructions

  1. Remove packaged parts in neck and/or rear (I wash my turkey)
  2. Dry turkey on outside and season with salt, pepper and garlic
  3. powder (as desired). Rub turkey with butter (at room temp.) I bake
  4. mine in a roaster pan with cover, but any large pan can be used and
  5. tent made from foil for cover. Add 1 cup water to pan. Bake at 350
  6. degrees or according to instructions on wrapper. Will take approx.
  7. 3 to 3 1/2 hrs. Don't overcook.
  8. After baking about 2 hrs. drain broth from pan and save for
  9. dressing.
  10. Broth from turkey makes best dressing. If more meat is needed you
  11. can also bake a turkey breast.
  12. DRESSING:
  13. Mix 3 cups self rising cornmeal mix, 1 med. chopped onion and 6
  14. eggs with enough buttermilk to make it consistancy of cornbread.
  15. Bake at 350 degrees till brown.
  16. Crumble loaf bread and cornbread in large pan, add broth and mix
  17. well.(I
  18. usually boil chicken parts for extra broth (backs make good broth).
  19. Mix enough broth till dressing is very moist. Bake 350 degrees till
  20. brown.
  21. (Save approx. 1 cup of dressing for gravy)
  22. GRAVY:
  23. Use remaining broth for gravy. Add dressing mixture and 3 boiled
  24. eggs
  25. (chopped). Boil gravy mixture enough to get dressing mixed in and
  26. comes to a boil. Add enough cornstarch to thicken as desired.
  27. Of course, you want to serve with cranberry sauce.
