Turkey and Dressing

Clark family recipe for Turkey and Dressing.
Ingredients
- Turkey (approx. 15 lbs.)
- Self rising cornmeal
- Buttermilk
- Onion (Med.)
- 1 giant loaf white bread (can be store brand)
- Eggs
- Butter
- Cornstarch
Instructions
- Remove packaged parts in neck and/or rear (I wash my turkey)
- Dry turkey on outside and season with salt, pepper and garlic
- powder (as desired). Rub turkey with butter (at room temp.) I bake
- mine in a roaster pan with cover, but any large pan can be used and
- tent made from foil for cover. Add 1 cup water to pan. Bake at 350
- degrees or according to instructions on wrapper. Will take approx.
- 3 to 3 1/2 hrs. Don't overcook.
- After baking about 2 hrs. drain broth from pan and save for
- dressing.
- Broth from turkey makes best dressing. If more meat is needed you
- can also bake a turkey breast.
- DRESSING:
- Mix 3 cups self rising cornmeal mix, 1 med. chopped onion and 6
- eggs with enough buttermilk to make it consistancy of cornbread.
- Bake at 350 degrees till brown.
- Crumble loaf bread and cornbread in large pan, add broth and mix
- well.(I
- usually boil chicken parts for extra broth (backs make good broth).
- Mix enough broth till dressing is very moist. Bake 350 degrees till
- brown.
- (Save approx. 1 cup of dressing for gravy)
- GRAVY:
- Use remaining broth for gravy. Add dressing mixture and 3 boiled
- eggs
- (chopped). Boil gravy mixture enough to get dressing mixed in and
- comes to a boil. Add enough cornstarch to thicken as desired.
- Of course, you want to serve with cranberry sauce.
