Clark family recipe for Sweet Potato Casserole.
Ingredients
- 6 8 sweet potatoes; baked and peeled
- 3/4 c sugar
- 2 eggs
- 1 tsp vanilla
- 3 TBS butter melted
- topping: 1/3 c butter
- topping: 1 c light gown sugar
- topping: 1/3 c self rising flour
- topping: 1 c chopped pecans
Instructions
- Add all ingredients and beat with mixer just till combined. Pour
- into a buttered 9 X 13 pan.
- Mix topping ingredients; mixing in the butter with a pastry cutter.
- Topping should be crumbly.
- Put on top of sweet potatoes.
- Bake on 375° for 20 30 minutes.
