Clark family recipe for Sweet Potato Casserole.

Ingredients

• 6 8 sweet potatoes; baked and peeled
• 3/4 c sugar
• 2 eggs
• 1 tsp vanilla
• 3 TBS butter melted
• topping: 1/3 c butter
• topping: 1 c light gown sugar
• topping: 1/3 c self rising flour
• topping: 1 c chopped pecans

Instructions

1. Add all ingredients and beat with mixer just till combined. Pour
2. into a buttered 9 X 13 pan.
3. Mix topping ingredients; mixing in the butter with a pastry cutter.
4. Topping should be crumbly.
5. Put on top of sweet potatoes.
6. Bake on 375° for 20 30 minutes.
