Clark family recipe for Squash Casserole.
Ingredients
- 2 lb. yellow squash, sliced
- 1 small onion, diced
- 1/2 stick butter
- 3 Cups grated Cheddar cheese
- 2 eggs, beaten
- 1/2 c. sour cream
- 16 crackers (any kind will work)
- salt and pepper to taste
Instructions
- Cook squash and onion in water until tender. Drain and smash.
- Add butter and 2 cups of cheese. Add eggs, sour cream and
- crackers. Mix well. Add salt and pepper to taste. Place in shallow
- 2 quart greased casserole. Top with more cheese and bake,
- uncovered, at 350° for 30 minutes (or until well heated and cheese
- is melted.)
Notes
Get the squash very tender and drain ALL the water out of it or it will be too smooshy!!
