Clark family recipe for Squash Casserole.

Ingredients

  • 2 lb. yellow squash, sliced
  • 1 small onion, diced
  • 1/2 stick butter
  • 3 Cups grated Cheddar cheese
  • 2 eggs, beaten
  • 1/2 c. sour cream
  • 16 crackers (any kind will work)
  • salt and pepper to taste

Instructions

  1. Cook squash and onion in water until tender. Drain and smash.
  2. Add butter and 2 cups of cheese. Add eggs, sour cream and
  3. crackers. Mix well. Add salt and pepper to taste. Place in shallow
  4. 2 quart greased casserole. Top with more cheese and bake,
  5. uncovered, at 350° for 30 minutes (or until well heated and cheese
  6. is melted.)

Notes

Get the squash very tender and drain ALL the water out of it or it will be too smooshy!!
