Clark family recipe for Salmon Patties.

Ingredients

  • 1 can salmon
  • 3 Tbs flour
  • 1 egg

Instructions

  1. Empty salmon into bowl. Remove skin and as many bones as you
  2. can. Squish up the tiny ones and you'll never know they're there.
  3. (Great source of calcium!) Mix the salmon with 1 egg and flour.
  4. Make into pat tie and fry in a small amount of oil.

Notes

These are so quick and easy! And good for you! Mee Maw always served them with "ho cakes." Just put cornmeal in a bowl, add some salt and water, making a runny paste consistency. Pour onto hot, greased frying pan and fry up little patties of cornbread. Yum Yum!
