Clark family recipe for Potato Soup.

Ingredients

  • 5 lbs of potatoes
  • 1 leek (white part only)
  • 1/2 stick butter
  • 1 - 32 oz box of chicken broth or "homemade"
  • 1 - 8 oz pkg cream cheese
  • milk
  • salt and pepper

Instructions

  1. Mince leek and cut potatoes into bite size.
  2. Saute leek in butter
  3. When tender add potatoes and broth
  4. cook till tender
  5. Spoon out about 1 cup of broth and whisk with the cream cheese
  6. Add this mixture back to soup
  7. Add enough milk to make soup
  8. Add salt and pepper to taste
