Clark family recipe for Potato Soup.
Ingredients
- 5 lbs of potatoes
- 1 leek (white part only)
- 1/2 stick butter
- 1 - 32 oz box of chicken broth or "homemade"
- 1 - 8 oz pkg cream cheese
- milk
- salt and pepper
Instructions
- Mince leek and cut potatoes into bite size.
- Saute leek in butter
- When tender add potatoes and broth
- cook till tender
- Spoon out about 1 cup of broth and whisk with the cream cheese
- Add this mixture back to soup
- Add enough milk to make soup
- Add salt and pepper to taste
