Clark family recipe for Potato Salad.
Ingredients
- Potatos
- mayonaise
- mustard
- sweet pickle relish
- pimentos
- hard boiled eggs
- onion optional
- dill
Instructions
- Boil potatoes until tender. Boil eggs in a different pan in salted
- water.
- Peel potatoes and cut into bite size chunks.
- Mix 1/2 cup mayo with 1 tsp mustard and 1/4 cup pickle relish,
- and 2 TBS pimentos
- Cut eggs into chunks.
- Combine all this into a large bowl and mix. Add salt and pepper to
- taste.
- When salad sits it tends to dry out so you might need to add more
- mayo and mustard before you serve.
