Clark family recipe for Oven-Fried Chicken.
Ingredients
- 1/4 c mayonaise
- 1 TBS Dijon mustard
- 1 tsp dried parsley flakes
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 c multigrain cracker crumbs (20 crackers)
- 1.4 c freshly grated Parmesan cheese
- 1 1/4 lb chicken strips or breast (6)
Instructions
- Stir together first 6 ingredients in a mixing bowl. Combine cracker
- crumbs with Parm cheese in a shallow dish. Brush chicken with
- mayonnaise mixture, dredge in crumb mixture. Place on a baking
- sheet.
- Bake at 400° for 20 minutes.
