Clark family recipe for Mexican Cornbread.
Ingredients
- 3 cups cornmeal
- 1 Tbs sugar
- 1/2 cup oil
- 1 - 8oz shoepeg corn
- 3 eggs, beaten
- 1 1/3 cups buttermilk
- 1/2 cup jalapeño
- 1 1/2 cup sharp cheese
Instructions
- Mix all ingredients together and pour in a greased 9 x 13 pan.
- Cook for 25 minutes at 400°
