Clark family recipe for Mexican Cornbread.

Ingredients

  • 3 cups cornmeal
  • 1 Tbs sugar
  • 1/2 cup oil
  • 1 - 8oz shoepeg corn
  • 3 eggs, beaten
  • 1 1/3 cups buttermilk
  • 1/2 cup jalapeño
  • 1 1/2 cup sharp cheese

Instructions

  1. Mix all ingredients together and pour in a greased 9 x 13 pan.
  2. Cook for 25 minutes at 400°
