Clark family recipe for Lime and Cilantro Chicken Salad.

Ingredients

  • 3 ears corn, shucked and grilled
  • 4 5 boneless skinless chicken breasts, seasoned with salt and pepper, grilled
  • and cut into bite size pieces
  • 1 1/2 cups diced cherry tomatoes
  • 1 pound mixed baby greens
  • 2 cups grated Jack cheese
  • 1/2 cup chopped red bell pepper
  • Kosher salt
  • Black pepper
  • 3/4 cups sunflower
  • fresh cilantro sprigs for garnish
  • dressing: 1/3 cup seasoned rice wine vinegar
  • dressing: 1/4 cups fresh lime juice
  • dressing: 1 clove garlic, minced
  • dressing: 1 tsp pureed chipotle chiles in adobe sauce
  • dressing: 2 Tbs honey
  • dressing: 1/2 tsp Kosher salt
  • dressing: 3/4 cup canola oil
  • dressing: 1 cup chopped fresh cilantro stems and leaves

Notes

This salad is unbelievable in the summer, with all the fresh vegetable ingredients. You could also substitute grilled shrimp for the chicken. I first had this salad at Nordstrom Cafe. It's VERY good! People will be impressed!
