Lime and Cilantro Chicken Salad

Clark family recipe for Lime and Cilantro Chicken Salad.
Ingredients
- 3 ears corn, shucked and grilled
- 4 5 boneless skinless chicken breasts, seasoned with salt and pepper, grilled
- and cut into bite size pieces
- 1 1/2 cups diced cherry tomatoes
- 1 pound mixed baby greens
- 2 cups grated Jack cheese
- 1/2 cup chopped red bell pepper
- Kosher salt
- Black pepper
- 3/4 cups sunflower
- fresh cilantro sprigs for garnish
- dressing: 1/3 cup seasoned rice wine vinegar
- dressing: 1/4 cups fresh lime juice
- dressing: 1 clove garlic, minced
- dressing: 1 tsp pureed chipotle chiles in adobe sauce
- dressing: 2 Tbs honey
- dressing: 1/2 tsp Kosher salt
- dressing: 3/4 cup canola oil
- dressing: 1 cup chopped fresh cilantro stems and leaves
Instructions
- Toss other salad ingredients in a chilled bowl.
- DRESSING:
- blend all ingredients in blender, but add the
- canola oil last in a slow steady stream.
Notes
This salad is unbelievable in the summer, with all the fresh vegetable ingredients. You could also substitute grilled shrimp for the chicken. I first had this salad at Nordstrom Cafe. It's VERY good! People will be impressed!
