Clark family recipe for Lemon Yogurt Cake.

Ingredients

  • 1 1/2 c all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 c plain whole milk yogurt
  • 1 1/3 c sugar, divided
  • 3 large eggs
  • 2 tsp grated lemon zest
  • 1/2 tsp vanilla extract
  • 1/2 c veg oil
  • 1/3 c freshly squeezed lemon juice
  • glaze: 1 c confectioner's sugar
  • glaze: 2 TBS freshly squeezed lemon juice

Instructions

  1. Preheat oven to 350°
  2. Grease and flour a loaf pan.
  3. Sift together the flour, baking powder, and salt into a bowl.
  4. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs,
  5. zest and vanilla.
  6. Slowly whisk the dry ingredients into the wet ingredients.
  7. Fold the vegetable oil into the batter, making sure it's all
  8. incorporated.
  9. Pour the batter into the prepared pan and bake for about 50
  10. minutes or until done.
  11. Meanwhile, cook the 1/3 cup lemon juice and 1/3 cup sugar until
  12. sugar dissolves.
  13. While the cake is still warm, pour the mixture over it and let it
  14. soak in.
