Clark family recipe for Irish Stew.

Ingredients

  • 1 lb. stew beef pieces
  • salt
  • pepper
  • olive oil
  • carrots
  • potatoes
  • 1 large can tomatoes

Instructions

  1. Using a large skillet add 1 TBS olive oil. With pan and oil very hot
  2. brown beef.
  3. Take browned meat out and "deglaze" pan with a little bit of water
  4. or red wine. The wine helps to give it more flavor. Add enough
  5. water to this to cover meat. Turn down and simmer for several
  6. hours until meat is very tender.
  7. Cut up potatoes and carrots into pan and add diced tomatoes.
  8. Simmer this until potatoes and carrots are tender. Add salt and
  9. pepper as desired. You can also add some garlic powder for flavor.

Notes

Serve with corn muffins---just like Mee Maw always has!! YUMMY !!
