Clark family recipe for Irish Stew.
Ingredients
- 1 lb. stew beef pieces
- salt
- pepper
- olive oil
- carrots
- potatoes
- 1 large can tomatoes
Instructions
- Using a large skillet add 1 TBS olive oil. With pan and oil very hot
- brown beef.
- Take browned meat out and "deglaze" pan with a little bit of water
- or red wine. The wine helps to give it more flavor. Add enough
- water to this to cover meat. Turn down and simmer for several
- hours until meat is very tender.
- Cut up potatoes and carrots into pan and add diced tomatoes.
- Simmer this until potatoes and carrots are tender. Add salt and
- pepper as desired. You can also add some garlic powder for flavor.
Notes
Serve with corn muffins---just like Mee Maw always has!! YUMMY !!
