Grilled Honey-Teriyaki Chicken

Clark family recipe for Grilled Honey-Teriyaki Chicken.
Ingredients
- 6 8 chicken breast
- brine: 2 cups water
- brine: 1 cup light brown sugar
- brine: 1/2 head garlic, unpeeled
- brine: 4 slices fresh ginger root
- brine: 2 TBS kosher salt
- brine: 8 sprigs of thyme
- glaze: 2 cups teriyaki sauce
- glaze: 1/4 cup honey
- glaze: 1 large (1 inch) piece fresh ginger root
- glaze: 1 head garlic, cut in half
Instructions
- Make the brine by putting everything in a plastic bag.
- Add chicken and let it brine for 1 2 hours in refrigerator.
- Preheat grill to medium heat or you can do it in a grill pan.
- Add the chicken to a large mixing bowl and drizzle with olive oil
- and pepper.
- Grill until done.
- Baste with teriyaki glaze for the last 5 minutes.
- Serve with Stir Fried Rice
- GLAZE:
- In a sm saucepan combine teriyaki sauce,
- honey,ginger, garlic. Simmer until rich and slightly reduced.
