Clark family recipe for Grilled Honey-Teriyaki Chicken.

Ingredients

  • 6 8 chicken breast
  • brine: 2 cups water
  • brine: 1 cup light brown sugar
  • brine: 1/2 head garlic, unpeeled
  • brine: 4 slices fresh ginger root
  • brine: 2 TBS kosher salt
  • brine: 8 sprigs of thyme
  • glaze: 2 cups teriyaki sauce
  • glaze: 1/4 cup honey
  • glaze: 1 large (1 inch) piece fresh ginger root
  • glaze: 1 head garlic, cut in half

Instructions

  1. Make the brine by putting everything in a plastic bag.
  2. Add chicken and let it brine for 1 2 hours in refrigerator.
  3. Preheat grill to medium heat or you can do it in a grill pan.
  4. Add the chicken to a large mixing bowl and drizzle with olive oil
  5. and pepper.
  6. Grill until done.
  7. Baste with teriyaki glaze for the last 5 minutes.
  8. Serve with Stir Fried Rice
  9. GLAZE:
  10. In a sm saucepan combine teriyaki sauce,
  11. honey,ginger, garlic. Simmer until rich and slightly reduced.
