Clark family recipe for Duke"s Mayonnaise Chocolate Chocolate Cake.

Ingredients

  • 6 Tbs unsweetened cocoa
  • 3 cups all purpose flour
  • 1 Tbs baking soda
  • 1 1/2 cups sugar
  • 1 1/2 cups Duke's Mayonnaise
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups cold water
  • icing: 1 cup butter, softened
  • icing: 1 cup cocoa
  • icing: 1 tsp vanilla extract
  • icing: 5 6 cups powdered sugar
  • icing: 6 or more Tbs milk

Instructions

  1. Preheat oven to 350°, grease and flour (or spray Pam) 3 cake pans.
  2. Sift cocoa, flour, baking soda, salt and sugar into a medium bowl,
  3. mix well. Combine mayo, vanilla and water in an electric mixer at
  4. low speed. Once smooth, slowly add in dry mixture until just
  5. incorporated (DO NOT OVERMIX!). Pour batter into cake pans
  6. and bake for 30 minutes or until done. Cool on wire racks and
  7. frost.
  8. ICING:
  9. In the bowl of an electric mixer, beat butter and cocoa with whisk
  10. attachment until smooth. Add vanilla. Add powdered sugar
  11. alternately with milk until icing reaches a spreadable consistency.
  12. (You may not need all 6 cups of usgar or 6 cups of milk)

Notes

This make a VERY rich chocolate/chocolate cake. What could be better than that?!?
