Clark family recipe for Divinity Fudge.

Ingredients

  • 3 Cups Sugar
  • 1/2 Cup Light Corn Syrup
  • 2/3 Cup Water
  • 2 Egg Whites
  • 1/8 Tsp Salt
  • 1 Tsp Vanille
  • 1 Cup Pecan pieces

Instructions

  1. Boil sugar, corn syrup and water together until it reach hard ball
  2. stage (250°)
  3. Beat egg whites and salt at high speed for 3 minutes. Pour syrup
  4. mixture slowly into the beaten whites while still beating at high
  5. speed. Continue beating until mixture forms a peak when beater is
  6. raised. (Sometimes this is 10 minutes or longer. Test a spoonful on
  7. waxed paper and see if it holds a form, no longer runny. Keep
  8. beating if still runny.) Add nuts and vanilla and drop on waxed
  9. paper.

Notes

We used to LOVE to have Nonie come and visit us. She was a very industrious woman... could do anything (like Lisa)! We always made Divinity Fudge with her... if it wasn't raining! She said you can't make fudge when it's raining because it won't get thick with all the humidity in the air.
