Clark family recipe for Creamed Corn.
Ingredients
- 12 ears fresh corn (yellow or white)
- olive oil (or your choice of seasoning)
- salt, pepper
- Shuck , silk and wash corn. With a very sharp knife, clip the very
- tops of the kernals, when all are cli
- Creamed Corn
- Fresh ears of corn (2 ears per persons)
- Salt
- Pepper
- Slice of bacon or vegetable oil
Instructions
- Using a serrated bread knife, take off just the tops of the kernels.
- Once all the
- tops are off, scrape the rest of the corn off of the ear. (This will be
- very
- sloppy, as the cream from the corn splatters! Wear goggles!
- HAHA)
- Fry a piece of bacon to get some grease in which to fry the corn (if
- you don't want to use bacon, use a little vegetable oil or butter).
- Remove the bacon and put all the corn into the hot grease. Stir
- constantly then turn down the heat. Add salt and pepper to taste
- and add some water if it's not real creamy. Stir intermittently while
- cooking on low heat. Cook 10 minutes, taste and see if it's done!!
Notes
Of course, all the Clarks like using white, sweet corn. YUMM-O!! Be sure and bake some biscuits and fried okra to serve with the fresh corn!
