Clark family recipe for Collard Greens.

Ingredients

  • 5 6 bunches of collards
  • 1 yellow onion sliced
  • 2 tbs garlic
  • 6 slices bacon, sliced
  • 2 qts chicken stock
  • 1tsp cayenne
  • 3 tbs apple cider vinegar
  • Salt and pepper to taste
  • Tabasco as needed.

Instructions

  1. Get about 5 6 bunches of collards clean remove rib and slice.
  2. Brown the onions, garlic, and bacon in pot then add greens and
  3. chicken broth. Season with salt and pepper to taste.
  4. Bring to a boil,
  5. Simmer on low, covered for about an hour add spices and
  6. seasonings.
  7. Let it cook for another 20 minutes or so
