Clark family recipe for Carrot Cake.

Ingredients

  • 2 Cups Plain Flour
  • 2 Tsp cinnamon
  • 1 Tsp Baking Soda
  • 2 Cups Sugar
  • 1/2 Cup Chopped Pecans
  • 3 Cups Carrots(Shredded or Pureed)
  • 1 Cup Canola Oil
  • 3 Eggs

Instructions

  1. Preheat oven to 350°.
  2. Cream together sugar, eggs, cinnamon, soda. Add the rest of the
  3. ingredients and mix until creamy.
  4. Spray 3 round baking pans with Pam and pour ingredients equally
  5. into all 3. bake for 30 minutes.
  6. Frost with a cream cheese icing with pecans. (See Cream Cheese
  7. Frosting)

Notes

Cake is done when you press the top of it and it springs back up. Or, you can stick a toothpick or knife in it and if it comes out clean, it's done!!
