Clark family recipe for Carrot Cake.
Ingredients
- 2 Cups Plain Flour
- 2 Tsp cinnamon
- 1 Tsp Baking Soda
- 2 Cups Sugar
- 1/2 Cup Chopped Pecans
- 3 Cups Carrots(Shredded or Pureed)
- 1 Cup Canola Oil
- 3 Eggs
Instructions
- Preheat oven to 350°.
- Cream together sugar, eggs, cinnamon, soda. Add the rest of the
- ingredients and mix until creamy.
- Spray 3 round baking pans with Pam and pour ingredients equally
- into all 3. bake for 30 minutes.
- Frost with a cream cheese icing with pecans. (See Cream Cheese
- Frosting)
Notes
Cake is done when you press the top of it and it springs back up. Or, you can stick a toothpick or knife in it and if it comes out clean, it's done!!
