Clark family recipe for Caramel Cake.

Ingredients

  • Boxed Cake Mix Yellow or French Vanilla
  • frosting: 3 Cups sugar take 3 Tbsp from this and place in a small skillet
  • frosting: 1 1/2 sticks butter
  • frosting: 3/4 cup milk
  • frosting: 2 Tbsp light Karo syrup
  • frosting: 1/2 tsp vanilla

Instructions

  1. Bake cake according to instructions on box using 3 cake pans. DO
  2. NOT over bake cake will be dry!
  3. If instructions say bake for 20 minutes, check at 15 minutes just to
  4. be safe. Cool before icing.
  5. FROSTING:
  6. Combine all ingredients except vanilla and 3 Tbsp sugar. Stir over
  7. medium heat until sugar dissolves and butter melts.
  8. When butter is almost melted, begin "burning" the 3 Tbsp of sugar
  9. in the small skillet over med high heat. The sugar will begin to
  10. melt around the edges and as you stir with a flat spatula, it may
  11. form hard balls of sugar. Continue to stir it until it melts
  12. completely and begins to turn brown. When it becomes a dark
  13. amber color AND the other pan is boiling rapidly, add the caramel
  14. to the boiling mixture, stirring constantly. When it has mixed
  15. completely, stop stirring and continue to boil for 1 minute.
  16. Remove from heat and add vanilla. Pour into a bowl and beat by
  17. hand or on lowest speed with mixer. It will have a silky shine to it
  18. when you start. As it cools, it begins to thicken and will loose that
  19. shine. May take up to 30 minutes by hand and 15 -20 minutes with
  20. mixer for it to be ready. That is when you should start icing the
  21. cake layers. Makes a 3 layer stacked cake or you can make a sheet
  22. cake and pour icing on top.
