Clark family recipe for Caramel Cake.
Ingredients
- Boxed Cake Mix Yellow or French Vanilla
- frosting: 3 Cups sugar take 3 Tbsp from this and place in a small skillet
- frosting: 1 1/2 sticks butter
- frosting: 3/4 cup milk
- frosting: 2 Tbsp light Karo syrup
- frosting: 1/2 tsp vanilla
Instructions
- Bake cake according to instructions on box using 3 cake pans. DO
- NOT over bake cake will be dry!
- If instructions say bake for 20 minutes, check at 15 minutes just to
- be safe. Cool before icing.
- FROSTING:
- Combine all ingredients except vanilla and 3 Tbsp sugar. Stir over
- medium heat until sugar dissolves and butter melts.
- When butter is almost melted, begin "burning" the 3 Tbsp of sugar
- in the small skillet over med high heat. The sugar will begin to
- melt around the edges and as you stir with a flat spatula, it may
- form hard balls of sugar. Continue to stir it until it melts
- completely and begins to turn brown. When it becomes a dark
- amber color AND the other pan is boiling rapidly, add the caramel
- to the boiling mixture, stirring constantly. When it has mixed
- completely, stop stirring and continue to boil for 1 minute.
- Remove from heat and add vanilla. Pour into a bowl and beat by
- hand or on lowest speed with mixer. It will have a silky shine to it
- when you start. As it cools, it begins to thicken and will loose that
- shine. May take up to 30 minutes by hand and 15 -20 minutes with
- mixer for it to be ready. That is when you should start icing the
- cake layers. Makes a 3 layer stacked cake or you can make a sheet
- cake and pour icing on top.
