Clark family recipe for Brocolli and Cheddar Soup.
Ingredients
- 1 head of brocolli
- chicken broth
- 1 can cream of chicken soup
- cheddar cheese
- garlic powder
Instructions
- Cook brocolli in small amount of water and 1 1/2 cups chicken
- broth.
- When tender, squash brocolli with potato masher. Stir in soup,
- dissolve well. Add approx. 1 1/2 cups grated cheddar cheese,
- sprinkle well with garlic salt and add salt and pepper to taste. Cook
- slowly till thickened. If not thick enough add 1 tbsp. cornstarch
- (mixed with water)
- If you prefer you can use extra chicken broth instead of soup and
- thicken with half and half and cornstarch.
