Broccoli-Corn Casserole

Clark family recipe for Broccoli-Corn Casserole.
Ingredients
- 1 - 16 oz. can cream style corn
- 1 - 10 oz. pkg frozen, chopped broccoli, thawed
- 1 egg, beaten
- 1 cup Ritz crackers, crushed
- 1 Tablespoon instant minced onions (not fresh!)
- 2 Tablespoons margarine, melted
- 1/2 tsp salt
- dash of pepper
- 4 Tablespoons melted butter
Instructions
- In a mixing bowl, combine corn, thawed broccoli, 1/2 cup crushed
- crackers, onion, butter, salt and pepper. Pour into buttered 1 quart
- casserole.
- TOPPING:
- combine remaining 1/2 cup cracker crumbs and 4
- Tablespoons butter. Sprinkle over vegetable mixture. Bake
- casserole, uncovered, at 350° for 35 40 minutes or until well
- heated.
Notes
Nana (Frances Pittard) used to make this all the time when we went to their house for dinner. I don't love broccoli but this is very good!!
