Clark family recipe for Broccoli-Corn Casserole.

Ingredients

  • 1 - 16 oz. can cream style corn
  • 1 - 10 oz. pkg frozen, chopped broccoli, thawed
  • 1 egg, beaten
  • 1 cup Ritz crackers, crushed
  • 1 Tablespoon instant minced onions (not fresh!)
  • 2 Tablespoons margarine, melted
  • 1/2 tsp salt
  • dash of pepper
  • 4 Tablespoons melted butter

Instructions

  1. In a mixing bowl, combine corn, thawed broccoli, 1/2 cup crushed
  2. crackers, onion, butter, salt and pepper. Pour into buttered 1 quart
  3. casserole.
  4. TOPPING:
  5. combine remaining 1/2 cup cracker crumbs and 4
  6. Tablespoons butter. Sprinkle over vegetable mixture. Bake
  7. casserole, uncovered, at 350° for 35 40 minutes or until well
  8. heated.

Notes

Nana (Frances Pittard) used to make this all the time when we went to their house for dinner. I don't love broccoli but this is very good!!
