Clark family recipe for Better than Take-out Fried Rice.

Ingredients

  • 4 cups cooked rice
  • 1 cup peas and carrots, frozen
  • 1 white onion, chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 3 tablespoons sesame oil
  • 1/4 cup "good" soy sauce

Instructions

  1. Prepare rice.
  2. Heat sesame oil in a large skillet on medium heat.
  3. Add onion, garlic, peas and carrots.
  4. Stir fry until tender.
  5. Crack eggs into pan and scramble, mixing throughout vegetables.
  6. Add rice and soy sauce.
  7. Add more soy sauce if it seems dry.
  8. You can add rotisserie chicken to this or serve with Honey
  9. Teriyaki Chicken.

Notes

Make sure eggs are completely cooked with vegetables. They will look like scrambled eggs when done.
